CLEVEDON CREAMERY– TRUFFLED PORCINI & PEPPER TARTINADE
The team at Clevedon Creamery wanted to create the ultimate cheese gift. With elegant glass packaging, the Tartinade can be served straight from the jar and enjoyed with friends and family.
Served with crostini or crackers, or enjoyed as part of an antipasto offering, the Tartinade is a fabulous addition to any cheese board. It can also add that extra bit of deliciousness to meat and vegetable dishes. OVER THE MOON DAIRY - GALACTIC GOLD
Galactic Gold is a Washed Rind cheese made by Over the Moon Dairy. Nicknamed the ‘stinky’ cheese, Galactic Gold is Over the Moon’s signature cheese having won numerous accolades both nationally and internationally.
When young, Galactic Gold tastes like a stronger camembert. As it matures the rind will become sticky and moist with a vibrant orange colour and develops a ‘smelly sock’ aroma. The earthy flavour of the Galactic Gold is rich and piquant with a creamy body.
If the flavour is too strong for you, try less of the rind and serve with fruit.
MAHOE CHEESE – MATURE EDAM
Based in Oromahoe, just outside of Kerikeri, Mahoe Cheese is a family business operating since 1986. Milking their own small herd for their cheese, Bob and Anne with their sons follow mainly organic principles in their farming and animal care.
This month we are featuring their Mature Edam made in the springtime when the grass is lush. Matured for 6 months (not too young, not too old) this cheese has a beautiful smooth flavour with sweet and floral notes, and a nutty aftertaste.
You can visit them at their small farm shop or the local farmers markets in Whangarei, Paihia and Kerikeri.
ORIGIN EARTH – SLEEPING GIANT
This cheese is from Te Matau-a-Māui/Hawke's Bay boutique dairy company Origin Earth and is named for Te Mata Peak and surrounding hills, which early settlers thought resembled a man lying down and was named the Sleeping Giant.
This is a sheep cheddar-style cheese which is made in large wheels (15-18kg each) and is aged for 16-24 months which means that crystals have started to form – a sign of a well-aged cheese. It has a firm texture, with notes of sweet pineapple when it first hits the palate, that progresses to a delicate nutty flavour. This cheese is reminiscent of Spanish Manchego.
Try shaving Sleeping Giant across a salad or add slices to a sandwich with tomato and salad greens. Make a sensational pizza with Sleeping Giant, fresh tomatoes and olives.
