CHEESE STORIES FROM BOX #25 - JANUARY BOX

HOHEPA, HERB QUARK

There’s five cheese this month! That’s right FIVE. Aren’t you spoilt? This one is a Hohepa Herb Quark, a super-fresh, simple cheese that’s made with organic herbs grown at their Hawkes Bay site. It’s won a LOT of awards, so we wanted you to have the chance to try it, even though it’s not really a cheese-platter type of cheese.

Quark has a short shelf-life, so we recommend you eat it within a week. It makes a very good spread on your breakfast toast.

 

CARTWHEEL CREAMERY, BLUE RHAPSODY

The Cartwheel Creamery is based in the Pohangina Valley, just next to the Ruahine Forest Park. The gorgeous surrounds must have a positive impact on their animals, because the cheeses these folk make are a creamy delight.

We reckon the Rhapsody is a great blue cheese for those new to the blue experience, or people with a sensitive palate. It’s soft and buttery, with a distinct blue cheese piquancy, but less of a kick than our other selections. Try it smeared on a cracker with a dollop of the Kairawhiti quince paste if you need to mellow out the flavours.

 

EVANSDALE, FARMHOUSE BRIE

Evansdale Farmhouse Brie is hella good. I mean, you could add this cheese to basically anything and it’d taste fantastic. Cheese platter, pizza, an old shoe - anything you like, just slap on some farmhouse brie and have at it. Why so good Evansdale? They won’t tell us, it’s a secret recipe.

The cheese has a mild flavour, with a velvety texture and just a little bit of firmness so you can really sink your teeth into it. It’s a simple classic, perfectly executed and we think you’re going to love it.

 

MERCER, PECORINO

This percorino is made by Albert Alferink of Mercer Cheese, who has been making cheese at the factory he built himself since 1981.

It has a big, gamey taste, a savoury afternote and a nice firm texture. This washed curd cheese is aged for at least 3 years (such self-control!) and is great on its own, on a cheese board, or shave thin slices over your favourite dish. This cheese won a gold medal at the 2020 NZ Cheese Awards.

 

OVER THE MOON, GALACTIC GOLD

The Galactic Gold is a washed rind cheese with a unique, savoury flavour. It has a creamy, soft and supple body, a little like the texture of camembert and as it matures the cheese develops a more complex taste. Eat it warm for to experience the full flavour
