CHEESE STORIES FROM BOX #24 - DECEMBER BOX

– DISPATCHED 8 DECEMBER 2020 –

MERCER NETTLE

You lucky cheese lovers! This is a 1 year old Nettle Gouda, produced by 67 year old cheese maker Albert Alferink every spring in the Waikato. He uses stinging nettle to create a salty, traditional Dutch flavour. It’s delicious and we’ve heard this hard cheese goes well with bacon. Let us know if you try that combo out.

CARTWHEEL CREAMERY, COPPERMINE

The Cartwheel Creamery Coppermine is an award winning washed-rind camembert that is literally washed as it develops, encouraging the growth of the coppery-coloured culture. It has a smooth texture and subtle flavours, with a slightly bitter back-note.

We think it’s fascinating how much flavour variety is created by New Zealand’s artisan cheese-makers and we love enjoying the similarities and differences similar cheese varieties have to offer. Always remember to give your cheese a sniff before you eat it - your nose contains 5,000-10,000 smell receptors that help you pick up the nuances of flavour.

OVER THE MOON, BLACK TRUFFLE BRIE

This is a Cheese Dealer favourite, best served alone on a cheeseboard where this unusual cheese can be the star. This Black Truffle Brie is a signature cheese by international cheese judge and Cheese Master Neil Willman. The rind is soft and white and the texture of the cheese is smooth with a luscious buttery flavour.

Made from high quality cow’s milk, each wheel is layered with black truffles giving a rich aromatic nutty or earthy taste. Truffles have also been described as mysterious, dark and musky. An absolute winner.

HOHEPA BLUE

We really love the social focus of Hohepa and we also love this cheese. The blue is their latest offering and it’s fabulous - so fabulous that it won a silver medal at the Cheese Awards. We think it’s a great addition to this months cheese box - not too challenging, but with a distinctive funk.

Hohepa’s cheese is produced using biodynamic methods - a spiritual – ethical – ecological approach to agriculture, based on the teachings of Rudolph Steiner. They milk 46 hand-reared, well loved shorthorned cows and they strive to ensure sustainability is at the heart of all that they do.

CRANKY GOAT, FRESH SMOKED GOATS CHEESE

This fresh, soft goat cheese has a smooth, velvety texture designed to carry flavour. Cold smoked for 20 minutes over applewood, this cheese has a light, smokey taste and is delicious served with smoked Salmon.

Cranky Goat is a small cheese company nestled at the end of the Mahakipawa arm, near Linkwater in the beautiful Marlborough Sounds.
